So I encountered this plant with huge leaves growing along the dirt road and it seems to be something called wild rhubarb, which is related to the rhubarb of pie fame but belongs to a different genus of the same family. The plant seen here is likely one of the many species of the Rumex genus, whereas the vegetable rhubarb belongs to the Rheum genus, and both belong to the family known as Polygonaceae.
